Simple Weekend Sourdough Bread Recipe

Sourdough bread has become one of the most popular breads to make due to its unique flavor and artisan appeal. Plus, it can be easier to digest than other types of bread. If you’ve been wanting to try your hand at making a delicious loaf of sourdough bread but have no idea where to start, this recipe is for you.

In this post, Chef Vivian Villa, founder of Unbutter, walks you through everything you need to do to bake the best sourdough bread.

What You’ll Need to Make Sourdough Bread

  • Enameled cast iron pot with lid

  • Parchment paper

  • Flour all purpose  4 1/3 cups (550g)

  • Semolina (or bread flour)  1/3 cup (50g)

  • Water , very warm (drained from sour cream or yogurt is ideal)  1 1/2 cups

  • Yeast  1/4 tsp

  • Salt   1.5 tbsp

  • Sugar a pinch

How to Make Sourdough Bread

Chef Villa states that this is a weekend recipe and that overnight dough rest will yield the best flavor.

Step 1: In a large bowl, combine the flours and salt, and set aside.

Step 2: In bowl, combine water, yeast  and sugar. Let it rest 5 minutes in a warm place (oven or microwave) until it blooms.

Step 3: Add yeast mixture to flours, shake bowl gently to combine or use chopstick or handle of wooden spoon to bring everything together to a shaggy mass. (It will look messy)

Step 4: Cover with plastic wrap or tea towel and let it rest on the counter for 24 hours.

Step 5: With floured hands, gather dough together on lightly floured surface. Do 4 stretches—this is done by pulling dough over onto other side, turning and repeating 4x until complete circle is done.

Step 6: Line the pot with parchment paper, then dust with flour.

Step 7: Place dough ball (seam side down) into pot, place lid on top, and let it rest 2 hours on the counter.

Step 8: After 2 hours, score top across surface with sharp knife, lightly dust with flour, then replace lid and place in cold oven.

Step 9: Turn oven on to 450°F and let it bake for 40 minutes.

Step 10: After 40 minutes, remove the lid and bake for an additional 10 minutes to crust surface.
