2 Bite Brownies with Pumpkin Frosting!

Are you craving chocolate but want something scrumptious that doesn’t take a ton of time to make? Chef Vivian Villa from Unbutter divulged her delicious two-bite brownie recipe and added an autumn twist to it by icing them with a creamy pumpkin frosting.

So, grab your apron and the following ingredients and get to baking these tasty bite-sized brownies!

2 Bite Brownies Ingredients

  • UnButter (if using salted, omit salt from recipe) 10 tbsp softened

  • Cocoa powder ¾ cup 

  • Instant coffee 1 tsp

  • Vanilla extract 1 tbsp

  • Salt ½ tsp

  • Brown sugar 1 cup

  • Flour all purpose  ½   cup

  • Chocolate chips  ½ cup

  • Eggs 2 large

Egg Replacer Option

To replace 1 large egg: Combine 1 tbsp finely ground flax seed w 3 tbsp water. Let it sit for 10 minutes to hydrate.

OR

Combine 1 1/2 tbsp of Oil (any kind) with 1 1/2 tbsp of water, and add 1 tsp of baking powder

Pumpkin Frosting Ingredients

  • Butter (or UnButter, salted or unsalted)  4 tbsp  (60g)

  • Pumpkin puree  ½ cup (150g)

  • Pumpkin spice  1 ½ tsp  (4.5g)

  • Icing sugar  4-5 cups  (40-60g)

  • Vanilla extract 1 tsp  (2.5g)

How to Make 2 Bite Brownies

Step 1: Preheat the oven to 350°F and use the middle rack.

Step 2: Butter the muffin pan and lightly dust with flour, or line the buttered loaf pan with overhanging parchment flaps.

Step 3: In a small bowl, combine sugar, cocoa powder, instant coffee, and salt.

Step 4: In a saucepan over medium heat, melt the butter, then stir in the contents of the bowl. Remove from heat and set aside to cool slightly.

Step 5: Combine the eggs and vanilla. Whisk into the mixture, then stir in the flour until the batter is moist. Make sure not to overmix it.

Step 6: Gently fold in the chocolate chips, bringing the batter together until no flour streaks remain.

Step 7: Use an ice cream scoop to fill muffin cups or pour into a loaf pan

Step 8: Bake muffins for 12-15 minutes, until the tops are shiny and a toothpick inserted in the center comes out clean. Sprinkle with flaky salt (optional).

Step 9: Bake brownie loaf 30-40 minutes to the same consistency as muffins (clean toothpick, shiny top)

Step 10: Let the muffins cool in the pan for 10 minutes before turning them out. Let the loaf rest 10 minutes before lifting it out of the pan with the parchment flaps.

How to Make Pumpkin Frosting

Step 1: Cream together the butter, puree, spice and vanilla;

Step 2: Mix the icing sugar in , cup by cup until desired consistency is reached.

For those who love cream cheese frosting, Chef Villa says you simply add 3/4 cup of cream cheese to the recipe. If you prefer a dairy-free version, she recommends replacing the cream cheese with 1 cup of crumbled or cubed silken tofu and adding 1 tablespoon of lemon juice and some of the pumpkin puree to a blender until smooth. Beat together with butter and vanilla, then beat in icing sugar to the desired consistency.
