Simple Pumpkin Bread Recipe

You can’t properly enjoy the fall season without baking a delicious pumpkin bread to snack on. Rather than fumbling through random recipes I went straight to Chef Vivian Villa founder of Unbutter (the most delectable vegan butter you will eat) for her favorite pumpkin bread recipe.
She even included a mouth-watering frosting recipe, so this isn’t your average pumpkin bread! Follow Chef Villa’s step-by-step guide to make the tastiest pumpkin bread you will eat.
Pumpkin Bread Ingredients List
Flour AP: 1 and 3/4 cups (200g)
Pumpkin pie spice: 1 and a 1/2 tbsp (14g)
Brown Sugar: 2/3 cup (115g)
Baking soda 1 tsp (6g)
Salt ¾ tsp (3.5g)
Pumpkin puree 1 and 1/3 cups (300g)
Zest of 1 orange or ½ tsp orange extract
Eggs 2 X large
1 tsp vanilla (2.5g)
Oil 2/3 cup (140g)
Egg Replacer- for 1 large egg, combine the following:
Flax seed (any kind, finely ground) 1 tbsp
Water 3 tbsp
Let sit 10 minutes to hydrate before adding to recipe
OR
Oil (any kind) 1 and a 1/2 tbsp
Water 1 and a 1/2 tbsp
Baking Powder 1 tsp
(Either one of these will work in this recipe)
Pumpkin Bread Frosting Ingredients
Butter (or UnButter, salted or unsalted) 4 tbsp (60g)
Pumpkin puree ½ cup (150g)
Pumpkin spice 1 ½ tsp (4.5g)
Icing sugar 4-5 cups (40-60g)
Vanilla extract 1 tsp (2.5g)
How to Make Pumpkin Bread

Step 1: Preheat oven to 350; place pan of water on bottom rack, baking rack in middle.
Step 2: Grease and line bread loaf pan with parchment paper trimmed to fit so that flaps overhang down both sides. (This will help to remove baked loaf from pan)
Step 3: In medium bowl, sift together all of the dry ingredients.
Step 4: In a large bowl, beat the eggs together with sugars, pumpkin , oil , zest and vanilla .
Step 5: Add the sifted dry ingredients to the wet mixture, then with a spatula gently fold to combine until no streaks are visible. Make sure you do not overmix!
Step 6: Pour mix into greased, parchment paper lined bread loaf pan.
Step 7: Bake for 45 minutes to 1 hour (depending on your oven); The loaf is ready when center springs back to touch or knife inserted in center comes out clean.
Step 8: Remove loaf from pan using parchment flaps. Place tea towel over loaf and let rest to room temperature.
How to Make Pumpkin Bread Frosting
Step 1: Cream together the butter, puree, spice and vanilla;
Step 2: Mix the icing sugar in , cup by cup until desired consistency is reached.
For those who love cream cheese frosting, Chef Villa says you simply add 3/4 cup of cream cheese to the recipe. If you prefer a dairy-free version, she recommends replacing the cream cheese with an equal amount of silken tofu, drained and patted dry, and combining it with one teaspoon of lemon juice.
